Yes, and that is what we usually recommend. Start with finance plus the one operational process that hurts most, then add modules once the first phase is stable.

No. Balances migrate at an agreed cut-off, and historic detail is either migrated or archived accessibly. Your accountant signs off the reconciliation before go-live.

Not necessarily. Headcount matters less than whether you carry stock, manufacture, or run projects. A 15-person distributor often needs one more than a 60-person consultancy.

We will tell you. A first call that ends with "not yet, here is what to fix first" is a better outcome for both of us than a project that fails.
